How do you make a bad biscuit?

Most of us would agree that a good biscuit needs to be soft. According to an article in the Atlantic, if you aren’t in the south, you’ll have a hard time finding a quality biscuit. The ones up north tend to resemble hockey pucks.

Just like you can’t have true New York-style pizza without New York water, you can’t have a true southern biscuit without a common southern flour. Who knew the kind of wheat used in your flour would make all the difference?
