Fleeting’s One Night visit to Tuscany: Effimero

It’s been a great year of pop up dinners for the crew at Fleeting over the course of 2024. Capitalizing on the culinary momentum they’ve created with one night menus outside of their regular offerings, Fleeting Savannah is going to take us to the Tuscany region of Italy next week. It’s a one night only event this time around, but it is also a bit of a precursor to a special menu they will be offering later this Summer.

Effimero is Fleeting’s one night pop up they’ll be hosting on Tuesday, June 18th. The entire menu is the work of Fleeting Chef Cameron Dempsey. Desserts included.

“I have cooked all of these plates over my time cooking for other chefs. I appreciate the authenticity of cooking like this, because there’s nothing to hide behind.  It’s either right or its not.” chef says.

The menu features a great selection of both salads and antipasti plus a few pastas and main courses. Believe it or not, as excited as chef tells us he is about all of it, it’s the two desserts he’s most excited about.

“The peach and brioche pastry dessert I’m very excited about it. It’s not the world I’m most comfortable with, so I just put myself out there.” he says. “The brioche peach thing and the Tuscan pine nut cake are gonna be the stars of the show.”

Strong words considering I tried a few of the dishes chef is preparing for the pop up next week. The Cacio e Pepe Rigatoni with Grilled Summer Vegetables is a dish I could eat every single day. Just wonderfully delicious on a hot Summer evening. I’m guessing I need to save room for dessert.

We did mention the Effimero (Italian for only a short time) pop-up will only be for one night, however, it is also serving as something of a sneak preview for Fleeting’s upcoming ‘pasta hour’ menu that they plan to roll out later this Summer. A smallish selection of pasta dishes that will only be available during dinner service between the hours of 5pm and 6pm.

“We were seeing lots of reservations between 6 and 9. Nothing from 5 to 9.” Chef says “So we wanted to do something that would introduce Fleeting to people at a lower price point. So that we might be able to invite that guest back at a different time.”
