Savannah’s dining scene just got a little more interesting — and a little more intimate. Lester’s, a new seafood raw bar tucked into the heart of the Historic District, opened its doors this week, and it’s already generating the kind of quiet buzz that serious restaurant people pay attention to.

The room is small by design — 42 seats total, including eight at the bar, plus an outdoor patio when the weather cooperates. Don’t let the footprint fool you, though. What matters here is the pedigree. Lester’s comes from the same group responsible for Obstinate Daughter on Sullivan’s Island and Wild Olive on Johns Island, two restaurants that have earned genuine respect in the Charleston dining world for doing things the right way. That track record carries weight.

The menu reads like it was written by people who actually love to eat. The raw bar leads with oysters on the half shell, Sapelo Sea Farms littleneck clams, and Georgia white shrimp — local and proud of it. A tinned seafood program featuring carefully sourced sardines, scallops, octopus, and more signals some real personality. On the plates side, expect things like a clam toast with white beans and lardo, charbroiled oysters with pimento butter and pickled green tomato, and a lobster salad with crème fraîche and salmon roe. There’s even a lasagna for two built around short rib ragù — a confident, unexpected move that tells you everything about this kitchen’s ambitions.

The bites we sampled during an opening reception were exceptional. I’m looking forward to a full meal just after the upcoming holiday.

Lester’s is dinner only, and for the foreseeable future, no reservations. Plan accordingly. Something tells us it’ll be worth the wait.
