The Birth of a Burger

Sometimes the best things in life happen by accident. That would include a burger. We’ve got one you need to try. Here’s the story of how it came to be.

Some months ago we were at Lucky Rooster Kitchen and Bar on Hilton Head Island gathering some video. A trip through the kitchen when I saw a burger sitting in the window about to head out to the dining room. What I saw were yellow triangles sticking out between burger patties. Curious, I asked chef/owner Clayton Rollison “hey, what is that?” pointing toward the triangles.

“Melted cheese.” he said.  “Oh, I thought it was chicken skins.” I responded and walked away.

As I exited the kitchen I heard the laughter from the cooks as Chef Clayton relayed my mistake.  I retreated to a corner, grabbed a glass of wine and cried.

In all seriousness, I wondered why we couldn’t have a burger with chicken skins on it.  The skins at Lucky Rooster are exceptional. On a nice greasy burger? Hell yes. Why not?

Next trip into the kitchen I told chef he needed to make a chicken skin burger.  He said “Yes. We are going to do it.  The Jesse Blanco burger. I will add it to the menu the next time we do burger night.”

That was months ago. Burger night has arrived.  The official burger has 2 patties, chicken skins, Serrano pepper aioli, smoked gouda and bib lettuce.  It looks fabulous. I cannot wait to try it.  You should. Soon.

Sunday nights are Burger night at Lucky Rooster. I’m guessing you will Eat It and Like It.
