Neon Taco – A Vegan Pop Up
“I just like to cook.”
Like everyone else out there, Andy Sutphen found himself at home a lot last year with not a lot to do. So he tinkered in his kitchen. A lot of us found time to do that, but for Andy it kind of rekindled an old flame. Now he’s about to roll out a vegan taco pop up shop downtown Savannah that you are very likely going to love.
It’s called Neon Taco.
Andy’s worked mostly as a bartender here and there, but that was because he was a little burnt out on his previous gig. He was a chef in his native New York City.
“I worked at a lot of great places. I loved it. But I just wanted to do something different.”
A friend invited him to Savannah for a visit and he immediately loved it. But he went back and moved to Brooklyn.
“That last winter I thought ‘screw this. I’m going back to Savannah.”
That was about 10 years ago. The last of which was doing some plating and tinkering in the aforementioned kitchen.
“Anthony saw some of my posts on instagram and called me to ask where I was doing this.” he says. “I told him I was in my kitchen.”
The Anthony he refers to is Anthony Scarpulla. Owner/Operator of GB Lobster Rolls on MLK Downtown Savannah.

“His food looked amazing. Eventually I asked him about doing something here.” Anthony says.
But opening a restaurant wasn’t really at the top of Andy’s wish list right now. So they settled on a 2 day a week pop up concept inside the already very successful GB Lobster shop. Vegan tacos and snacks.

“There’s really only one place to get good vegan in Savannah.” Andy says “So we thought there would be interest.”
The menu is small and will remain small. A handful of items like tacos -shrimp and jackfruit for now. Elote with a cashew crema and a few other munchies.
“We’ve been playing with a few things. We tried some rockfish the other day. We liked it. So a fish taco will probably make it to the menu at some point.”

His guacamole was very good and the dragonfruit salsa was delicious. A different approach than every other salsa out there obviously, a nice touch. I think we know that the last thing I am or ever will be is vegan. But I did enjoy this tiny menu. Try it for yourself.
Add to all of that, a full liquor bar and some creative cocktails as well and you’ve now got a new spot to check out downtown.
