It’s been fun to watch Savannah’s riverfront change over the years. With all that new development, comes new restaurants and bars.
One of the newest luxury hotels is finally ready to open its signature restaurant. Thompson Savannah has just announced it will open Fleeting this Thursday, September 16.
Fleeting is expected to pay tribute to its location along the river and the Georgia coastline as well as its close proximity to farms with a menu boasting fine Southern fare.
“Creating the menu for Fleeting gave me the opportunity to really dive headfirst into all that this city has to offer,” said executive chef Robert Newton. “Our team is dedicated to translating the seasons onto each plate; we’ll highlight every ingredient’s peak moment in time so guests can savor the beauty of the present.”

SHARE – dishes to be enjoyed by everyone at the table
- Steamed savory custard, shrimp, rice cracker, seaweed
- Duck confit biscuit buns, red eye chili oil
- Country captain spring roll, coconut, roasted rice
VEGETABLES & GRAINS – a range of local produce, fresh pasta, and rice preparations
- Wood-fired vegetables, black garlic, crumbled olive, lemon
- Little gems and collards, cured yolks, pancetta, toasted almonds
- Anson Mills farro verde, chanterelle, arugula, local egg, cashew
MEAT & FISH – simplistic yet complex flavors from a handful of fresh ingredients
- Duck breast, sunchoke, plum, beet
- Pork shank, hominy, jimmy nardello, pickled peppers, cane syrup
- Grilled market fish, Austrian winter peas, herbs, lime, collard capers
There will also be cocktails and wine pairing curated by beverage director Chelsea DeMark.
