Coming Soon to the Starland District: FishBar

We long passed the point in the Starland District where any available piece of property is going to get its tires kicked immediate and snapped up not long after that. Further proof of this is the news of Starland’s newest restaurant on the horizon. It will be called Fish Bar and it will be brought to you by Southern Cross Hospitality, owners of The Collins Quarter, The Fitroy, The Deck, et al.

They will be occupying the space formerly filled by Squirrel’s Pizza on Bull Street, directly next door to Water Witch, Starland’s popular Tiki Bar Concept and a couple of doors down from UKIYO, also owned by Southern Cross.

It’s fair to say, it all came together fairly quickly. Squirrel’s last day was at the end of 2024. Construction has been underway at FishBar for a little bit now.

FishBar is described to us as ‘a primitive fire concept built to showcase the beautiful natural resources, charm, character, and culture of the low country.’

The man in charge will be Executive Chef Max Barbee, who’s culinary career has taken him through James Beard awarded kitchens and across the country. Chef Ben Agostini will be by his side.

The restaurant will be built around a locally-sourced custom-made open fire grill where the guys will cook light, tapas-style plates. There will also be a wine and cocktail program at the new location. Additionally, the new space will share a patio with their neighbor Water Witch. The plan as of now is for food from FishBar to also be available in that patio area. Details on that are still being ironed out.

A seafood concept in Starland should do well as the neighborhood continues to evolve. Combine that with Kyle Jacovino’s Lucia Pasta Bar not two blocks away and the profile along the Bull Street corridor will look not only different, but worlds better, 12 short months from now.

As we mentioned, the build out is underway. They hope to swing the doors open in early Summer.
