The DeSoto’s ‘Proof and Provisions’ nears Completion

Back in March, we told you that The DeSoto Hilton in the heart of Savannah’s historic district was the latest hotel to get a nearly complete makeover as the city continues to move toward a more updated look across the board. Phase 2 of the work going on at Liberty and Bull streets is nearing completion and you don’t need an invitation to see that the changes are some of the most dramatic around for an already existing property.

Edgar’s Proof and Provisions is the new cocktail bar and restaurant that will sit along Liberty Street in front of The DeSoto. As of August 1st the hotel will be losing its affiliation with Hilton brand. The focus, cocktail-wise, at Proof and Provisions will be their bourbon collection. Obviously, they will carry all other spirits as well.

The culinary side of P&P will be led by Executive Chef Dusty Grove, formerly of Pacci Italian Kitchen at The Brice Hotel.

The work at The DeSoto has been on-going for well over a year. Rooms have been remodeled to the tune of nearly $11 million. The pool deck will be completely revamped. The food and beverage space is getting much needed makeovers as well.

Edgar’s Proof and Provisions will offer a ‘front porch’ feel along Liberty Street with outdoor heating in the winter and cooling in the summer. The new outdoor area features a canopy cover and cafe lighting. Inside, they describe the space as ‘intimate and rustic.’

They are scheduled to open June 12th.
