Sweet Olive Jam Puffed Pastry Bites with Swiss and Cranberry
- 1 puffed pastry sheet defrosted
- 1 jar of Sweet Olive Jam (OliveAffairs.com)
- 1 pound of quality Swiss cheese, cubed
- Dried cranberries
Flour a clean and dry surface and roll out the pastry sheet. Cut squares using a 1 ½ x 1 ½ square cookie cutter. In a greased mini muffin tin, place the dough in each slot. Add ½ tsp. sweet olive jam, top with Swiss cheese and finally add a few dried cranberries. Bake in a 400 degrees oven about 12 minutes until the cheese is bubbly and the crust is puffed and brown. Let sit for a moment and slide out of the muffin tin with a small inverted spatula. Makes about 2 to 3 dozen.
