Buffalo Chicken Dip

There are a lot of different ways to attack this was.  This version calls for chicken breasts. Chicken breasts can dry out quickly.  Which in this case isn’t such a bad thing.  But you may want to try roasting a chicken.  Lightly seasoned of course.  Just to give yourself some moisture in your chicken when it gets folded into this recipe.  It’s wonderful and perfect for watching a big game. Football, basketball or otherwise.  The other tip I could offer you is if you are making this for a party, don’t buy the cheapest bleu cheese you can find.  Splurge a little.  It will make a WORLD of a difference in your final product.

Maybe you top it with a little cheddar cheese. Or another mild yellow. Can you ever really have too much cheese in a dip?
