April is National Grilled Cheese Month, better known in my house as every freakin’ month! How can you not love ooey, gooey, cheese smushed between two pieces of bread? I’m a sucker for extra-sharp white cheddar cheese with basil on rosemary sea salt bread. I’m also obsessed with melted gruyere and caramelized onions on sourdough. Swiss cheese and prosciutto….yes, please! If I can make a grilled sandwich out of it, then I’m a fan!
Tips for a GREAT grilled cheese? You need to start with great cheese AND great bread. I always recommend grating the cheese for better melting, and going for a ratio of thick cheese to thin bread. Butter the bread instead of melting it in the pan, and flatten the sandwich during grilling.
